And to add in my two cents, if you look at the core of their beings, Knives' entire genocidal career is basically an epic child's tantrum, and thus he hasn't emotionally matured since the age of one, which is only compounded by his seclusion and lack of experience with life. The contrast with Vash's eventful, character-building life should be obvious.
Because everything ultimately comes back to the Tessla incident, let's use her to illustrate:
Vash's immediate reaction: shuts himself and his brother in the room, refuses to eat when Rem drags them out, tries to end his own life and then Rem's at the first opportunity. Typically red. Knives' immediate reaction: falls unconscious. Awakens several days later, pretends not to remember anything, takes the story of Tessla seemingly philosophically. Typically blue.
Over the long term, however, Vash tends to Rem's wounds, talks things over with her and gains a certain maturity as a result. (blue) Knives, on the other hand, lashes out at the world that has wronged him, attempting to kill all humans without any regard for the life of the sisters he later claims he did it for.(red)
