Although he's only ever reset his image once, to Kristine Kochanski, to trick Lister into giving up his bid to become an officer. Long story. Technically holograms can't change their appearance without another personality disc from another person but EH.

And there's actually really a Girl!Rimmer too. Arlene Rimmer. In Parallel Universe, Lister and Rimmer meet their female counterparts. And The Cat meets his counterpart: The Dog.
